What are we all doing here?

Yep, I agree. I taught for two years in Shanghai and felt emasculated from day one. But is there any guarantee that a teacher will be listened to? That's not just a comment on China, it'sa comment on young people the world over.
On the other hand, while recognising the futility of teaching English itself, my colleagues and I did put a big effort into encouraging thinking and creativity among the students, and thus filling in for something the Chinese education system badly lacks. It is progress, of a sort.
